Chicken Cacciatore
Ingredients
1 chicken (fryer sized) cut into pieces (or equivalent)
1 14.5 oz. can crushed tomatoes
1 14.5 oz. can tomato sauce
1 13 oz. can mushrooms
½ tsp. crushed red pepper
4 cloves garlic, finely diced
1 small onion, finely diced
1 cup beef stock (can substitute 1 beef bouillon cube and 1 cup water)
parsley to taste
basil to taste
salt & pepper
Lightly brown chicken in olive oil on both sides; remove from pan
Sauté garlic and onion about 10 minutes, add rest of the ingredients and bring to a boil
Add chicken pieces and cook approximately 45 minutes or until chicken is done (160°F internal temp)
Serve over spaghetti or rice
