Shrimp Creole
Shrimp Creole
This was one of our favorites growing up. I'm not sure where mom got this recipe from.
Ingredients
1 medium onion, minced
2 TBSP butter
½ cup chopped green pepper
¼ cup chopped celery
1 tsp parsley
1 tsp salt
⅛ tsp cayenne red pepper
1 six-ounce can tomato paste
2 cups water
2 cups cleaned cooked shrimp
3 cups hot cooked rice
Cook onion in butter until tender
Stir in remaining ingredients except shrimp and rice
Cook over low heat, stirring occasionally, about 30 minutes
Stir in shrimp and heat through
Serve over rice
