Cast Iron Skillet Cornbread
This recipe can be halved if you don't have to feed a large crew. What you shouldn't do is try to make it without a cast iron skillet.
Ingredients
6 tbsp. melted butter or oil (batter)
1-2 tbsp. oil (coating cast iron skillet)
4 cups cornmeal
4 tbsp. sugar
3 cups milk
2 eggs
Preheat oven to 375°F; put your cast iron skillet in the oven while you make the batter, so it will be hot. If you don't own a cast iron skillet, get one BEFORE making this recipe.
Combine all dry ingredients.
Add milk and eggs and mix until blended.
Add butter (or oil) and mix well.
Remove hot skillet from oven, coat bottom with 1-2 tbsp. oil, and add batter.
Bake 25-30 minutes or until a toothpick inserted near the middle comes out clean.
