Eclair Cake
Cool Whip, instant pudding, and graham crackers team up to make one of the Reedy Family holiday favorites. My brother once tried to get fancy and made an eclair cake with homemade mousse and chocolate ganache. That wasn't any better than this recipe.
Ingredients
3 boxes instant French vanilla pudding
1 16 oz container of Cool Whip
2 boxes regular graham crackers
1 container chocolate frosting
Make pudding according to package directions, letting set approximately 5 minutes until it thickens
Gently fold in Cool Whip, making a poor man's mousse
Layer graham crackers and mousse, finishing with a layer of graham crackers on top
Cover the graham crackers with icing
Eclair cake is better after it sits in the fridge awhile.
Mom's Tip Melt the icing in the microwave, so you can pour it over the graham crackers. Don't get it too hot though!
