Cranberry Sauce
Cranberry Sauce
Ingredients
12 ounces of fresh cranberries
¾ cup + 2 tablespoons sugar
½ cup orange juice + juice of 1 lemon
enough water to make 1 cup of liquid
zest from 1 orange
¼ to ½ tsp ground ginger (more or less to taste - still working on the amount here)
Pour liquid and sugar into medium sauce pan and bring to boil
Add cranberries, ginger, and zest
Boil gently for 12 minutes
The cranberries should burst, and it should look like cranberry sauce. You may have to mush stubborn cranberries.
Note on Sugar I've seen everything from ¾ to 1½ cups of sugar. I like the sauce brighter and less sweet, but ¾ cup isn't quite enough for me.
