Ronnie's Veggie Beef Soup
This Instant Pot recipe from Ronnie is one of my mom's favorite veggie soups.
Ingredients
2 TBSP olive oil
1# cube steak
2 packs frozen veggies for soup
1 bag mini red potatoes
1 medium yellow onion
2 cans diced tomatos
1½ cartons of beef stock
oregano to taste
3 bay leaves
basil to taste
thyme to taste
garlic (or jarlic) to taste
salt and pepper
Set Instant Pot to sauté; add 1 tablespoon of olive oil and half the cube steak. Brown 2 minutes per side, and set aside for the moment
Add another tablespoon of olive oil and brown the remaining half of the steak
Recombine steak, add in veggies, garlic, and onion and sauté everything together for three minutes
Add 1½ to 2 containers of beef stock to pot
Add in tomatoes
Add in potatoes
Season mix to your liking
Place top on Instant Pot, cook 20 minutes under pressure, let set for 5 minutes, then release steam
Eat dinner
Hibernate as necessary
