Banana Bread
Ingredients
1¾ cup all-purpose flour
¾ cup whole-wheat flour
1 tsp baking soda
1 tsp cinnamon
¼ tsp Allspice
⅛-¼ tsp table salt (or equivalent amount of other salt)
1¼ cup sugar
8 TBSP butter (1 stick)
2 large eggs
3 medium bananas (mashed)
125 g sour cream
½ TBSP vanilla extract
Preheat oven to 350°F
Grease the bottom of 2 9"x5" loaf pans or muffin pans or a Bundt pan (when using my Bundt pan, I spray it with Baker's Joy instead of greasing it).
Combine the dry ingredients thoroughly and set aside
In a mixing bowl (I use my stand mixer), cream the sugar and butter
Beat in the eggs, one at a time
Beat in the sour cream
Beat in the mashed bananas
Add the vanilla
Add the dry ingredients a bit at time, allowing each addition to incorporate
Bake about 1 hour in a 350°F oven
It's done when a toothpick inserted in the center comes out clean
