Ingredients
210 g (1¾ cup) all-purpose flour
85 g (¾ cup) whole-wheat flour
1 tsp baking soda
1 tsp cinnamon
¼ tsp Allspice
½ tsp table salt (or equivalent amount of other salt)
250 g (1¼ cup) sugar
8 TBSP softened butter (1 stick)
2 large eggs (room temperature)
3 medium bananas (mashed)
125 g plain yogurt or sour cream (I use 2% milk plain yogurt.)
½ TBSP vanilla extract
Preheat oven to 350°F
Grease the bottom of 2 9"x5" loaf pans or muffin pans or a Bundt pan *
Combine the dry ingredients thoroughly; set aside
Mash the bananas and mix in the yogurt; set aside
In a mixing bowl (I use my stand mixer), cream the sugar and butter
Add the vanilla
Beat in the eggs, one at a time
Alternate adding the dry ingredients with the banana mixture, allowing each addition to incorporate
Bake about 1 hour in a 350°F oven **
It's done when a cake tester or toothpick inserted in the center comes out clean
* I usually use my my Bundt pan, and I spray it with Baker's Joy instead of greasing it.
** In my oven, it takes 50 minutes with the rack in the center position.
