Pinto Beans & Rice
Pinto Beans & Rice
You can make this in the crockpot or on the stovetop.
Ingredients
1# dried pinto beans
⅓ cup picante sauce
1½ tsp salt
½ tsp pepper
1 tsp garlic powder
1 TBSP garlic, minced
1 TBSP chili powder
½ cumin
½ tsp oregano
3 bay leaves
2 cups cooked white rice
Put rinsed beans in crockpot or large pot
Cover beans with water, plus about 2 inches over top of beans
Add all ingredients except rice
Cook on high in crockpot until tender (about 3 hours–add water if necessary)
Add rice and cook until rice is warm
Suggestion These beans go great with Cast Iron Skillet Cornbread.
