Macaroni Salad
Ingredients
3 cups uncooked elbow macaroni
2-3 tomatoes, diced (the ones from Granddaddy's garden were the best)
1 cucumber, diced (more if you like more cucumber)
¼ to ½ of a medium onion, chopped reasonably fine
1 green pepper, diced
mayonnaise
salt & pepper
Cook the pasta per the package instructions, then rinse thoroughly to cool (also removes some of the starch) - WARNING Don't overcook the pasta, and don't forget to salt the pasta water
Combine the pasta, tomatoes, cucumber, and green pepper in a large bowl
Mix in mayonnaise until it looks right (that is exactly what my mom said when I asked her for the recipe)
Add salt and pepper to taste, make sure it's mixed in thoroughly
